Halloween Candy Corn Popsicles

Halloween is fast approaching which if you have children you know all too well parties and sweets are pretty much inevitable. However, at our house I strive as much as possible to limit candy and sugary treats. Conventional candy is full of high fructose corn syrup, artificial flavors and colors, hydrogenated oils, and GMOs.   I usually will go buy some better options such as Justin's Peanut Butter Cups, or Yummy Earth lollipops to hand out. No candy is healthy obviously because of the sugar content, but at least they contain sugars that are not derived from GMO sources and they are free of artificial colors and flavors! 

 My kids love to trick or treat so we let them enjoy the fun then swap out all of their candy and let them go pick a toy out at the store. I will give them several pieces of the better options that I have bought from the store as well so they still get a treat but I feel much better about it. You would be surprised how much they go for this concept! They would rather have something that lasts and they can play with for multiple days then keep all of their candy that will be gone within a day or two. I also want to mention that you don't have to go over budget and spend a ton more money on organic candy than regular candy. Just budget out whatever you normally spend and make the swap. You will get less, but you are also supporting companies with better values, and can make this an excuse to turn your arch light off a little early. Nothing wrong with that right?

About party treats these Candy Corn Popsicles that I am sharing with you are the perfect treat for the kids without all the sugar, and even some hidden vegetables and super-food ingredients such as turmeric!!! You can always sub out the stevia for some raw honey. The only downside of this recipe is it does take steps because the different layers of the popsicle have to each freeze before you pour the next layer. But they are super cool looking and taste pretty good as well. My kids enjoyed them at least so I hope you will too!

Servings 4 Large or 6 small popsicles (Use a popsicle holder)

Ingredienst:

  • 1 1/4 cups Full Fat Canned Coconut Milk
  • 2 3/4 cups Frozen Mango Thawed ( I bye the huge bags of organic frozen mango from Costco)
  • 6 oz Carrot Juice ( homemade or store bought preferably organic)
  • 2 1/2 tsp Vanilla Extract
  • 4-6 drops Liquid Pure Stevia
  • 1/4 tsp Ground Turmeric 

First Layer (White):

  • 1/4 Cup Full Fat Coconut Milk
  • 1 tsp Vanilla Extract
  • 2-3 drops liquid stevia

Second Layer (Orange): 

  • 6 oz Carrot Juice
  • 3/4 Cup Frozen Mango Thawed
  • 1/4 cup Full fat Coconut Milk
  • 1/2 tsp Vanilla Extract
  • 2 drops Liquid Stevia

Third Layer (Yellow):  

  • 1 1/2 Cups Frozen Mango thawed
  • 1/4 Cup Full fat Coconut Milk
  • 1 tsp Vanilla Extract
  • 1/4 tsp Ground Turmeric
  • 1-2 Drops Liquid Stevia
  • Splash of Carrot Juice

 

 

Directions:

  1. In a blender add all the ingredients for first layer. Blend well then add to the bottom of each popsicle holder. Put the popsicle holder in the freezer for 30-40 min.
  2. Blend all the ingredients for the second layer in blender and pour on top of first layer. Then put back into freezer again this time for a little longer 45-50 min. 
  3. Finally blend all the ingredients for the third l and once again pour on top of last layer then place holder sticks and place again in freezer until popsicles are completely frozen through approximately 4 hours or overnight
