Chicken Bacon Ranch Lettuce Wraps
As you all probably know from the theme of my blog I am always trying to come up with recipes that include all three criteria: 1. They need to be simple, 2. They need to be Healthy using only REAL FOOD, and 3. They need to be kid approved (Since we have 3 older kids who can tell me if they like something I always make sure the majority 2 out of the 3 will eat it).
These Chicken Bacon Ranch Lettuce Wraps are SO Easy. Just cook up your bacon and add some leftover cooked chicken, sliced avocado, and top with my Dairy Free Ranch Recipe. I used some leftover rotissarie chicken we had bought from Whole Foods just a couple days before. You can also use some Nitrate Free/ Antibiotic Free Deli Turkey, or completely leave it out all together. My littlest one loves bacon, but doesn't like plain avocado as much, so we just did a Bacon Ranch Wrap for him!! You can whip these up for a quick lunch or a simple dinner and add some fruit salad and carrot sticks on the side!
Servings: For 2 Wraps
- 2 Pieces of Good Quality Bacon (Pasture raised is best)
- 2-3oz Leftover Chicken sliced thinly or picked off the bone
- 1/4 Avocado sliced
- 2 Pieces of Romain Lettuce
- Top with my Ranch Recipe (I like to make a batch weekly and store in my fridge for when I need it)
Directions: Cook up your bacon until crispy in a pan and set aside. Prepare each wrap by placing lettuce then adding 1 slice of bacon to each wrap along with the chicken and avocado. Lastly, top with some ranch dressing. Eat these like tacos :)
