Dairy Free Mint Chocolate Chip Ice Cream
I'm so excited to share this recipe with you because it is AMAZING!!! And even better, you don't have to feel all the guilt from eating it!! There is zero refined sugars added (except for a little from the chocolate chips), and you are getting in almost a serving of greens when you eat this becasue I added in spinach which made it a beautiful green color just like the mint ice cream you would buy from the store, but without the yucky food coloring of course.
I recently was asked to be on our local Fox news station to do a food demo which you can watch here so I decided this recipe would be the perfect kid-friendly treat just in time for summer!!
- 1 can full fat coconut milk
- 2 cups fresh spinach
- 3TBSP-4TBSP raw honey (depending on desired sweetness)
- 1 pastured egg yolk ( omit if high quality eggs are unavailable)
- 1tsp vanilla extract
- 2 tsp peppermint extract
- 1/4tsp sea salt
- 1/4 cup dairy free dark chocolate chips
Directions: Add all ingredients except for chocolate chips to blender and blend until completely blended. If using a ice cream maker add mixture and mix until thickened then add in chocolate chips at ended. If making without out a ice cream maker then add all ingredients to a freezer safe dish and freeze for several hours to overnight. Take mixture out of freezer and let sit for about 30 min until beginning to soften. Add this frozen mixture to your blender and mix on low until you have a soft serve consistency. Fold in chocolate chips and serve.
