Breakfast Smoothie Bowl

You can't get much easier than all-in-one meals in a bowl! And this smoothie bowl really is all you need in a meal with added avocado (I know it's a fruit but for these purposes lets consider it a veggie ;), and collagen peptides for some added protein. I'm obsessed with the benefits of collagen and try to sneak it in whenever I have the opportunity, and even better the collagen actually adds a little creaminess and volume without a weird taste. I named this recipe Breakfast Smoothie Bowl, but you can enjoy this anytime of day for a snack or even for a quick dinner. In less than 10 minutes all 3 of my older kids were enjoying breakfast!!! You can switch up your toppings according to what items you have on hand. I topped these bowls with some chia seeds, shredded coconut, local bee pollen, blueberries, and some banana. But make them your own and try different toppings. Dark chocolate chips, different types of berries, raw cocoa nibs, dried dates goji berries,  raisins, and different types of nuts all make great toppings. 

Servings: 3 

Ingredients:

  • 1 c Full Fat Canned Coconut Milk  
  • 1 Frozen Banana (cut into smaller pieces before freezing)
  • 1/2 c Frozen Blueberries (always try for organic when you can)
  • 1/2 c Frozen Strawberries
  • 1/2 large Avocado 
  • 3 Scoops Collagen Peptides   
  • 1 TBSP Lucuma Powder  (You can totally omit this but I just like the taste it gives and adds some added nutrients)
  • 1 tsp Raw Honey
  • Chopped fresh fruit, shredded coconut, chocolate chips, nuts or seeds for toppings

** Lucuma is a fruit originating from Peru. It has a caramel/creamy flavor, is low in sugar yet adds a nice sweet taste,  and contains a variety of vitamins and minerals**

   Directions: Add Your coconut milk along with remaining ingredients EXCEPT for the collagen to a blender. A high speed blender such as a Vitamix which I have and LOVE works the best since there is so much frozen ingredients.  Blend the ingredients and when everything is almost blended completely add in the collagen. Continue to blend for 10-20 more seconds until everything is thick and smooth similar to a soft serve consistency. Pour mixture into 3 bowls and add your toppings of choice. Eat immediately as your smoothie bowl will begin to melt and become a liquid consistency!!!
